Serves 2
Ingredients
200g of chicken cut into bite size pieces
1 garlic clove minced
2 tbsp NSA Heinz Tomato ketchup
1 tbsp pineapple juice
1 tbsp rice wine vinegar
2 tbsp water
1 tbsp soy sauce
3 baby sweet corn sliced in rounds
6 radish quartered
½ cucumber cut into moon shapes
2 carrots cut into star shapes and batons
½ pepper cut in star shapes
30g broccoli in small florets
2 spring onions shredded finely
2 pineapple rings small chunks
Pinch sesame seeds
Oil for stir frying
How to
1. Heat a wok or frying pan add some oil. Add the chicken to the pan and gently fry for a couple of minutes until golden brown ( about 3minutes). Add the minced garlic and cook for a further minute. Add in the tomato ketchup, water, soy sauce, pineapple juice and vinegar to the browned chicken and stir over a gentle heat. Add in the carrot, pepper shapes and cook for 2 minutes.
2. Add in the broccoli, pineapple, radish, sweet corn, cucumber and half of the spring onions and cook for a further minute stirring to ensure everything is coated in the sauce.
3. Add the stir fry to a bowl sprinkle with sesame seeds and the rest of the spring onions. Serve with rice or noodles.
