1 onion (sliced finely)
2 cloves garlic (minced)
30g all-purpose flour
220g macaroni or pasta of choice
150g mature cheddar cheese (grated)
25g Parmesan (grated)150g king prawns (shelled & deveined)
100g cooked smoked lardons
100g sourdough/ focaccia larger crumbs(toasted lightly)
Oil for frying
Salt and pepper to taste
Heat the oven to 180C .Heat a frying pan, add oil, the onions and cook over a low heat for a couple of minutes until the onions are soft and translucent, add in the garlic and cook for a further minute. Don't allow the onions and garlic to brown or burn.
Add the butter to a saucepan and melt over a low heat, stir in the flour and cook for a further minute, it should be like a paste now. Add in the milk 100 mls at a time and continue whisking until all the flour is completely incorporated, smooth and custard like. Add in 120g of the cheddar cheese, all of the parmesan and stir it in until it is melted.
Bring a pan of water and a pinch of salt to the boil, add in the macaroni and cook for 6 mins, stirring occasionally. Remove and set aside.
Drain the macaroni well, then stir into the sauce. Add in the cooked onions, garlic and lardons, prawns and stir again. Spoon the mix into a heat proof baking dish. Sprinkle the crumbs and remaining cheese over the top cook in the oven for 15-20 mins or until the sauce bubbles and browns on top.
