The lions share Egg muffins


Serves 2

Ingredients

4 large eggs

¼ onion finely diced

30ml milk

2 tbsp sweetcorn

2 tbsp onion (finely chopped)

30g cheddar cheese (grated)

1 can NSA Spaghetti hoops


Garnish

Eyes

Black olives sliced in half

Nose and mouth

Mini red bell pepper sliced for the nose and mouth a sprinkle of chia seeds.

Whiskers

Very fine slices of cucumber


How to

1. Preheat the oven to 180c and

grease a muffin or mini individual tart tins very well.

2. Add the eggs, milk to a large jug and mix and whisk. Add in the onion, sweet corn, cheese and mix gently.

3. Pour the mix into your prepared muffin tins leaving a small space from the top for them to rise and place in the oven to cook for 12 to 15 minutes depending on your oven. They should be spongy to touch without raw egg visible.

4. Heat the Spaghetti as per manufacturers guidelines. Remove the muffins from the oven and place one on the plate, garnish with the Spaghetti mane and the veggie facial features. Serve immediately with fresh crunchy vegetables such as broccoli, or cauliflower.
