1. Heat a pan gently and add in your oil cook for 1 minute. Add in your finely chopped onion to your pan and cook for 4 minutes and then your finely chopped garlic for 1/2 a minute. Add in your tomatoes and your harissa paste and all of your spices and sugar. Cook for 10 minutes over a medium heat until tomatoes have broken down and reduced slightly.
2. Make a well for each egg with the end of a wooden spoon and drop in the eggs one by one. Cover with a saucepan lid and cook gently until the egg whites are set.
3. Season to taste and garnish with a herb of your choice. Serve with some crusty bread
